    Yuumeee! Don't add more than a tiny pinch of Cayenne if you don't like hotness. Unfortunately, a lot of oil was needed. But they were worth it.

    I was so glad to find this recipe because I hate baked fries. I made it exactly as written, except that my final frying took considerable longer than 1 min., more like 5 min., to get the sweet potatoes crispy. I really loved the results, but I was alone in that opinion. They weren't much of a crowd-pleaser. In fact, at my 4th of July bbq, everyone besides me either refused to try them, or else left them on their plate after tasting one or two. I will admit that they were very sweet, even with just the Tbs. of brown sugar. I guess it's a love-it or hate-it kind of a recipe.

    I loved this recipe. Boiling the sweet potatoes makes peeling so easy and fast. The seasoning makes them fantastic! I highly recommend this recipe.

    I made 2 mistakes on this one - first I didn't parboil the potatoes; I just did the double frying. It didn't make a difference. The other mistake I had was that my cayenne was old and left a slight bitter taste (I threw out that cayenne and bought a new one. These were still fantastic. No leftovers.

    Great fries. Simple, fast and delicious. Fries should be fried. Emeril thanks for not baking them! These are such a treat.

    This was my first time ever having sweet potato fries & I'm glad I tried this recipe. Boiling the potatoes first really cut down the cooking time. It was a winner in my house.
