    This is a wonderful recipe. I made it for a luncheon and everyone raved about it. It was even better the next day! I used boneless chicken breasts that I cooked in chicken broth, onions and celery so the chicken was very flavorful itself.

    Loved this recipe! Instead of chopping the apple, I grated it..excellent combination with the tarragon. Also, I too omitted the parsley as the tarragon was herb enough! I'm sure we will be eating this salad often in the warm months ahead....makes for a very special lunch!

    Perfect for my garden club herb luncheon. Can be made the day before. I did not serve on a lettuce base. Question the need for the parsley because the tarragon is such a strong flavor. Absolutely delicious!

    This is a really good chicken salad. The lemon juice and tarragon bring out a wonderful taste sensation. I will make this again and again.

    My husband and I both enjoyed this as a summer dinner meal. I used romaine lettuce instead of arugula as it's not as strong tasting. Also, I used unsalted peanuts (toasted and it really adds to the salad. Definitely let it sit in the fridge for an hour at least before eating. Love Emerill's show as he's not only informative, but has great recipes!

    This is so good. I have been looking for a salad like this for a long time. I loved everything about it. Next time I may use pecans instead of cashews just because I love pecans.

    This recipe is wonderful. I served it at a shower and it was the most popular item. Several people asked for the recipe. It's really good. I poached chicken breasts for the cubed chicken, and it kept the meat really moist.

    the overall salad was good. but it could use some minor adjustments. it has a bitter taste. i don't know what it is, but it's very bitter tasting.

    I had co-workers over to work on curriculum and they all LOVED this recipe. The flavor was perfect, and the texture of the cashews added a nice touch. I'm not a fan of chicken salad, but I really liked this recipe. I plan to use it often!
