One of the reasons I gravitate towards Emeril's recipes is because they are usually bursting with flavor and incorporate unique and interesting flavor combinations. In this case, too many flavors came in competition with each other and everybody died. The fresh crab flavor got lost in the ravigote, which had too high a ratio of briny cream to lump crabmeat. The tomatoes and the watercress dueled each other for flavor primacy. And what I expected would be a fresh and bright salad ended up being rather heavy and unsatisfying, although it was quite pretty.
