I actually add another pound of meat to the recipe - for me, the veggie mix is too much for two lbs of meat. This is one of my favorite recipes - mainly because I love the chipotle chili glaze.

This tasted like spicy taco meat in loaf form. I ended up throwing out the whole thing after two bites.

i make it with ground turkey and you still get a moist and delicious meatloaf. I omit the pepper jelly, instead i use: chili sauce chipotle and honey. yummy.

This was the most flavorful meatloaf I have ever eaten, and so easy! I was worried because my husband keeps telling me he's not crazy about chipotle, but he practically licked the plate and said it was "the bomb!" This will be a new regular dish in my house, thanks Emeril!

I make this almost every week for my husband who loves spicy food. I can't find chorizo sausage so I substitute Jimmy Dean Hot Sausage and ketchup is a lot cheaper than chili sauce and works just as well. Lately I have even used it as a hamburger mix to cook on the grill: out of this world!!

Tried this the other night. Made a deconstructed version of Emeril's Southwest Essence. Chorizo and 90% lean Sirloin were a wonderful combination. Used 'Mission' tortilla chips well-crushed (4 oz.. Don't like sweet pepper jellies so skipped that ingredient. Glad I did, as 8 oz. of chili sauce was already very sweet (Used Heinz chili sauce. I don't like most meatloaf recipes because of their sauces, but this one sounded very interesting so I went with it. I made one loaf with and one without. The combinations of red Bell and Poblano were fabulous. As one other person rating this recipe stated, that the corn tortillas added a nice corn component. Another person's rating didn't care for Chorizo. When making this recipe, you need to remember that this is 'not your grandmothers meatloaf'. It is a wonderful marriage of flavors. Very much in keeping with the TexMex theme. The sauce was a nice try for my tastebuds, but I won't use it next time. My personal preference, not a reflection on the quality of sauce ingredients. Bottom line is that I will add this to my 'favorites' list for easy access when I'm in the mood. Nice job Emeril!

I really enjoyed this recipe. It was the first time I used or tasted Chirozo sausage and it enhances the flavor of the meatloaf. Didn't add tortilla chips. It was still good and would add again. Onion would have been good to add.

I saw this recipe coming up back on Sunday and decided to try it being a meatloaf freak. I've got my own recipe down pat, but this was a nice twist! Very moist, but I used a third ground sirloin, a third ground veal, and a third ground chuck. I thought more fat was needed. Also, do people who rate these recipes actually read? Add onion? Huh???
