    This chili was amazing. The spices are great, and the beer added makes this truly an awesome meal. It gives it slightly a sweet taste to it, but you can easily identify the spice too. Everything in this dish is balanced beautifully.

    Years ago, my family decided that by Christmas Eve we were tired of traditional holiday food so we always have our favorite appetizers and a big pot of my grandfather's chili. My grandfather wasn't able to make his this year so somehow I got elected. My cousin offered some venison from his last hunt so I looked for a recipe... this was a home run!!!! My grandfather, who's known for his chili, even asked me for the recipe (and he doesn't do recipes. One note; I omitted the jalapenos after reading reviews about how spicy this was and it was still pretty spicy.

    I'm not sure why everything labeled "Tex" need to be firehouse hot, but this was too hot for our liking (and my husband adds tabasco to everything. We doubled everything but the meat and "hot" spices. I added a can of pinto beans instead of the extra meat, and it came out pretty tasty. It has some good flavor, but you can't taste it past the heat in his recipe.

    On a side note, after spending a number of years living in Texas and the rest of them living in the midwest and northeast, I'm not sure you can call anything Texan or Mexican if it contains venison. When was the last time you saw deer in either of those areas?

    This is a spicy,flavorful chili . Instead of the chunks of venison, i substituted all ground venison that is 50% venison and 50% ground pork. With all of the spices you can't really taste the gameyness of the meat.

    I used beef instead of Venison and it was delicious. A huge hit with my husband and dad who are Chili snobs. Very rich in color and taste, delicious. I didn't think it was too spicy either. Loved it and I'll definitely make it again.

    I made some changes but the end result was delicious. It has a great smokey flavor and a lot of spice but not too much. What a hearty chilli.

    added a can of kidney beans
    used antelope instead of venison
    used Guiness beer
    skipped the masa harina - it was think enough

    This was the best chili I have ever tasted!! The recipe was really easy to make, though I did leave out the jalapeno's out since kids were eating it! Will definately make again!
