I've been looking for the perfect Thai iced tea recipe for years, and I've finally found it! The key seems to be adding the sugar as Emeril recommends, rather than putting a little into each glass as so many other recipes call for. This tea is very sweet, so cut the sugar if you want it to be a little less so.
One of the other reviewers mentioned that the sweetened condensed milk falls to the bottom of the glass in a glob, and I had the same problem the first time I made a cup. The solution appears to be mixing the condensed milk with the cream in a small bowl first, until blended, and then adding it to the cup of tea. I haven't had any problems since discovering this fix.

Original name of this tea is Cha Dum Yen what literally mean Tea Black Ice : And Cha Yen is the same tea but with milk. Here you can buy a full set to make thai iced tea at home: thaiteaset dot com Love it! :

First of all, Thai tea IS Thai iced tea. "1 cup of Thai tea" is not an ingredient, and presumably you don't already have the finished product on hand. Luckily due to its increasing popularity in the US, you can buy Thai tea powder mix from ethnic stores and online. Thai (iced tea is actually made from BLACK TEA. Refer to Giada's Thai Iced Tea Recipe if you do not have or do not plan on buying the powder mix.

I was recently introduced to Thai Iced Tea at a nice Thai restaurant in NYC and then once again at a Thai fast food joint. Both were equally tasty.
So I figured it was fairly simple to make at home and I followed the recipe here EXACTLY!! (duh, its not hard to follow. I used Thai Tea Blend that I bought at the Teavana store in the mall - which was quite expensive, by the way.
This was NOT the uniquely flavored, orangey concoction I was served in the restaurant. Maybe I used the wrong tea, but I was quite disappointed.
Anyways, specifically concerning my low rating for THIS recipe.....the tablespoon of sweetened, condensed milk fell to the bottom of the glass in a blob nor did the cream, poured slowly, exactly float on the top. The final result was almost TOO sweet for my taste.

You can find Thai tea in a large bag at any Asian market. We bought one today and it was about $3.50. It's in a clear bag and just labeled- Thai Tea

This thai tea was fantastically easy to make and delicious.
I am a huge fan of Emeril's and have tried many of his recipes, but this was the first recipe I tried that was a beverage and I was impressed.
I will surely be trying more from now on!!!!
