Ingredients

  • 1 tablespoon butter
  • 2 heads of garlic, split in half
  • 1 quart of cream
  • 1 pound peeled white potatoes, 1/4 inch slices
  • 1 pound peeled sweet potatoes, 1/4 inch slices
  • 1 pound red potatoes, 1/4 inch slices
  • 2 cups grated Parmigiano-Reggiano cheese plus 2 tablespoons for garnish
  • salt and white pepper
  • 2 tablespoons chopped chives

Directions

Preheat oven to 400 degrees.

Grease an oval souffle dish with the butter. In a saucepan, bring the garlic and cream to a simmer. Season with salt and white pepper. Simmer the cream for 15 minutes, or until the cream has reduced by 1/4 and has slightly thickened. Season the potatoes with salt and white pepper. Alternate layering the white potatoes, sweet potatoes, red potatoes, and cheese in the prepared dish. You should have a total of six layers. Strain the garlic from the cream and pour over the potatoes. Cover the souffle dish with aluminum foil. Place in the oven and bake for 30 to 35 minutes. Remove the foil and continue cooking for 10 minutes or until the top is golden brown. Cool the gratin for 10 minutes before serving. Garnish with 2 tablespoons each of cheese and chopped chives.

    Tasted good but not so pretty to look at!

    We loved the flavor of this dish but it was not the most appealing to look at. Next time I'm going to make mine in a bigger... pan like a cake pan. My biggest challenges were getting it done and making it look more edible. By layering the potatoes and cheese in a bigger pan, I believe it will get done closer to the timeframe listed in the recipe. Once it is almost done, I think it is really important to follow the recipe & put another generous layer of the cheese on top to make it look pretty and browned on top. I didn't put enough cheese on top at the end. I believe I cut up a little too many potatoes and crammed my soufle dish too tight with potatoes making it take longer to bake. One thing I did do right was I baked mine without the foil cover for quite a while which helped bake out some of the liquid. I will definitely make it again with these modifications.     These creamy potatoes were like a taste of heaven! I changed the recipe slightly though. I used garnet yams and sweet... potatoes, and added some nutmeg to the cream. I would also suggest putting a pan under your casserole dish because the cream bubbles over. You're the man Emeril... Baam!Read more

    I loved this...I didn't use sweet potatoes, but I always change recipes around. It took me longer to cook than it noted,... but I like it nice and crispy. My friends still talk about these potatoes they were totally impressed!Read more
