I usually love Emeril's recipes, but this one really disappointed me. It takes a long time to make , and I don't think it would have tasted any different from using store-bought broth + chicken breasts. I also didn't like that it didn't call for any cheese, but that's just a personal preference.

This is the BEST tortilla soup ever!!! So extremely easy to make! Only cutting up the veggies is the time consumer. But, if you have a helper it goes by fast!

Initially this soup tasted great. Not fantastic, but it was good. I thought it could have used more heat and that paired with the kinda bland tortilla flavor in the background I thought this soup was the plainest tortilla soup Ive ever had.

I made this soup exactly as the directions implied, but felt it lacked that Mexican kick I love in tortilla soups. Personally, I LOVE heat so I added green chiles in the end, as well as corn and black beans for texture. That said it was WONDERFUL. If you like a touch of heat I would suggest doing this, or leave some of the seeds from the jalapeno,

This was the best soup I have ever had. However, I am on weight watchers and need to know the nutritional info. i.e.calories, serving size, fat, and fiber amounts in order to eat this soup on my diet. Can anyone help me with this?

I found this recipe of Emeril's over two years ago. Over the years I've made a couple of alterations, but it comes out GREAT every time I make it. I was looking for a recipe I could make to substitue instead of having menudo, since I'm the only one in the family that does not like menudo. Growing up, I only drank the broth and ate the hominey. Soooooo, I now add hominey to this receipe and am in heaven. That's the only addition I've made and instead of a whole chicken, I used two half chicken breasts and the rest chicken thighs........both with skin on. Making some tonight. Can't wait for the house to smell like LOVE!

This recipe was totally easy and had great flavor. I discarded the veggies from the stock, but then added more to the soup. I added a yellow squash, one zucchini, one red bell pepper, two stocks of celery, two small carrots and some green cabbage. It was delicious!

This is the best tortilla soup EVER! I made it for my husband (who happens to be Mexican and he loved it. He says it's authentic, none of the phoney stuff. My other family members says it was the best they've ever had. Thanks Emeril.
