    Thank you Emeril for this delicious Tortilla Soup didn't change a thing. It was a hit with family and friends. We like spicy and this recipe has the "kick"and flavor.

    I've always loved tortilla soup, but Emeril's recipe takes it over the top. The complexity of flavors and textures is incredible. The soup base is quite spicy, but the chipotle crema and avocado add some coolness, and the tortilla strips add a nice crunch. When we don't have access to an ear of corn, we take frozen corn and brown it in a dry cast iron frypan. Also, when we don't feel like deep-frying, we toast the tortillas in a little corn oil in the same cast iron frypan. I can't imagine ever using a different recipe. Delicious!

    This was fantastic. I used bagged tortilla chips. I added smoked paprika and cayenne pepper to the chicken while it was browning. I roasted the corn and a red pepper on my grill since I don't have a gas stove. The chipotle crema is a really nice touch, although it does just curdle up when added to the hot soup which makes it look a little unappetizing but it tastes wonderful. Easy to make and not too time consuming.

    I also modified this receipe according to what I had on hand. Fresh corn is out of season so I used frozen corn. Also used a sweet red bell pepper instead of a poblano pepper. I still roasted it the same way though. The whole family loved it. Almost forgot, I didn't have any corn tortillas but I still wanted the Emeril Essence so I just added the essence to to soup rather than coating the tortilla stripes with it. I love the fact that you can make minor modifications and still come out with a great soup.

    I've made several tortilla soup recipes and eaten several versions in Mexico City. This one is a great one. The heat level is high (but for most of my family that is good. The roasted corn is a nice addition but not necessary (I just noticed that Emeril has a previous recipe that does not include the corn and the presentation is more elegant The essence on the tortilla strips is a nice touch, but not a necessary unless your planning to make more Emeril dishes!!

    This was sooo good- I didn't have chicken so I just used chicken stock and I didn't make the chipolte crema. But it was amazing!!

    I never thought I could make something that tasted so good! I even used frozen corn and it tasted great! I will make this many more times.
