Ingredients
- 1 lime, cut into 16 pieces, plus more for garnish
- 16 fresh mint leaves, plus sprigs for garnish
- 2 tablespoons superfine sugar
- 1/2 cup white rum
- Seltzer water
Directions
Divide the lime pieces, mint leaves, and sugar evenly among 2 (12-ounce) glasses. Using a muddler, mash the lime pieces and bruise the mint leaves while dissolving the sugar. Add enough chipped ice to each glass to fill. Add 4 ounces of rum to each glass, then use a cocktail shaker to combine and thoroughly chill each drink separately. Pour the contents of the shaker back into the glasses and top each drink with a splash of the seltzer water. Garnish the glasses with lime and mint sprigs.

I just halved he recipe for one and they turned out delicious. I may add a teaspoon more of sugar because it wasn't as sweet as I like it but it was still good. A good addition is to add blackberries to the lime/sugar/mint leave mix!

I noticed Emeril has at least 3 or 4 Mojito recipes here, this one must have been a mistake.
There is NO way 4 oz of rum per drink will be good and there isn't enough sugar to lime ratio so you end up drinking rum with sour lime juice.
