    I just halved he recipe for one and they turned out delicious. I may add a teaspoon more of sugar because it wasn't as sweet as I like it but it was still good. A good addition is to add blackberries to the lime/sugar/mint leave mix!

    I noticed Emeril has at least 3 or 4 Mojito recipes here, this one must have been a mistake.
    There is NO way 4 oz of rum per drink will be good and there isn't enough sugar to lime ratio so you end up drinking rum with sour lime juice.

    Maybe I muddled too much and such, but for me the lime and mint came on too strong, and the rum was overpowering. I liked it better when I decreased the mint and lime by half and added more seltzer. Next I'll try mojitos that don't have muddling and mashing. I must like a more "delicate" mojito than this recipe served up.

    with the advent of the latest mojito craze, Americans have once again shown a startling aptitude at taking something good and tarting it up by making endless variations on it. The pineapple mojito, the pina colada mojito, the sake mojito to name just a few. This recipe is a simple, easy to make, mojito flavored mojito. Imagine the novelty. This recipe is solid in and of itself but really shines as a starting point to tweak the amounts and proportions of ingredients in order to make it your own.

    It sounds like a bit of work, but is totally worth it. This mojito is as good or better then any you'll find in South Beach. I recommend using a top quality rum.
