  • 1/2 pound Chourico sausage, small diced

  • 1 1/2 cups chopped carrots
  • 2 tablespoons minced garlic

  • 1/4 cup Port

  • 1/2 teaspoon ground cumin
  • 2 teaspoons piri-piri sauce or crushed red pepper
  • 2 bay leaves
  • 1 cup dried white beans, soaked overnight, cooked until tender and drained

Continue to saute for 2 minutes. Season the chicken with salt and pepper. Add the chicken and saute for 1 minute. Add the port, chicken stock, cumin, red pepper and bay leaves. Cover and simmer for 25 minutes. Add the tripe, veal, and beans. Continue to simmer for 20 minutes. Remove the bay leaves. Ladle into serving bowls and garnish with parsley
