    Yummy! The fish was very moist and with great flavor. I used sliced lime instead of lemon and put it on the skin. just used rosemary and thyme with sliced garlic and a drizzle of olive oil in each cavity. Cooked all my 4 farm raised trout for 25 minutes. Thank you Emeril.

    Great flavor, moist fish. Super easy. I used fillets instead of whole fish, cooked it for just shy of 20 mins- perfect!

    Half a fish (not a whole one works with this as well. Use half of the ingredients (esp the lemon and you will find this to be an excellent, moist entree.

    This was better than I thought it was going to be and very easy to do. The trout turned out terrific. We fly fish, but prefer to release the trout and buy the fish that we eat. The trout in the market was farm raised and excellent!

    My husband brought brown trout fillets home from a fishing trip. I tried this recipe because it was something other than frying and my entire family loved it. We have 3 children 1, 3 and 10 and when I find a recipe they all like it goes directly into my Family Favorites album. I'm going to make a stuffed roast chicken with the remaining herbs other than the mint and a good mint tea will go nice with the meal!

    None of the flavors overpower each other but give a great taste to the fish. We had fresh lake trout caught that day and it was great!

    I also made this with fillets and it was very delicate and wonderful. My husband loved it and I would definitely make it again.

    This was wonderful! I made it with fillets instead of whole trout, but otherwise followed the directions, and it came out just beautiful and tasted amazing. My boyfriend loved it, and bragged to his coworkers the next day what a good cook I am.
