Ingredients
- 1 tablespoon olive oil
- 1 tablespoon minced shallots
- 1 teaspoon minced garlic
- 1 cup chopped cherry tomatoes or diced tomatoes
- 1/2 cup dry white wine (recommended: Gruner Veltliner)
- 2 tablespoons capers with juice
- 1 tablespoon fresh squeezed lemon juice
- 8 tablespoons chilled, cubed unsalted butter
- 1 tablespoon chopped fresh parsley leaves, plus sprigs for garnish
- 4 (7 to 8-ounce) portions sushi grade tuna (cut at least 1-inch thick)
- 1 tablespoon kosher salt
- 1 1/2 teaspoons fresh ground white or black pepper
Directions
Heat a 10-inch saute pan over medium heat, and add the olive oil. When the oil is hot but not smoking, add the shallots and garlic and cook for about 1 minute. Add the tomatoes and cook, stirring often, for an additional minute. Deglaze the pan with the wine and reduce until nearly evaporated, about 4 minutes. Add the capers and lemon juice to the pan, and swirl the butter into the sauce a little at a time until all the butter is incorporated. Add the chopped parsley to the sauce and season with salt and pepper. Remove the sauce from the pan and reserve until the fish is grilled.
Set a grill or a grill pan over medium-high heat and season with vegetable oil. Season the tuna with the salt and pepper. Once the grill is hot, place the tuna on the grill and sear for 2 minutes. Turn the tuna over and cook for an additional minute for rare, or 2 minutes for medium. Serve the tuna with the sauce draped over 1 side of the fish and falling onto the plate. Garnish with sprigs of fresh parsley.

I prepared this tonight for my kids and husband. I followed the recipe with a few changes. I didn't buy Ahi I used Swai which is like a catfish from Vietnam farmed raised. I broiled the fish then poured the sauce over it when I served it. My kids don't usually like fish but they gobbled it all up and said they would like me to fix it again. Didn't use any salt in the sauce it was salty enough. GREAT sauce! I could see using this with Pasta and shrimp or even chicken. Will definitely fix again!

I made this last night and my wife and I both couldn't stop exclaiming how incredible it was. The tart of the capers was just perfect. And while the sauce is distinctive, it didn't overwhelm the fish. You could put this sauce on an old shoe and it might suddenly become appetizing. Highly recommended this recipe.

Made 2 nights ago for my food-snob husband. He went crazy over it. Loved it so much that he's been talking about it non-stop ever since. I had never cooked tuna before. It was so simple to make, it surprised me. Highly, highly recommend it. My young children even loved it.
