    This recipe is fail proof...and I even modified it to ingredients I had on hand; chorizo instead of the italian sausage, red bell pepper instead of the green, chicken broth instead of beer, crushed tomatoes instead of diced...and it was still amazing!! Per other comments, I scaled back a bit on the salt. As an additional option, I put sour cream and lime wedges on the table, the family loved it!! My husband claimed "this is the best chili I've ever had!".

    I make a slightly healthier version, but it doesn't lack any of the flavor of the original. The substitutions I made were as follows: hot italian turkey sausage (instead of regular sausage and low sodium chicken broth (instead of beer.

    Doubled the bean by adding Navy beans, Doubled the green pepper by adding sweet yellow pepper. Used crushed tomatoes instead of chunk tomatoes. Changes made the recipe thicker and chunkier. VERY VERY GOOD! Everyone loved it - raved about it. Just the right kick to satisfy the most people. Several people even wanted the recipe! This one is a keeper.

    I made this recipe yesterday for a small Super Bowl get-together and it was a Touchdown and an extra point! I added a little more of the Bayou Blast than was called for in the recipe and I added a combination of pinto, white, black and red beans. Everyone loved it! Recipe is easy to follow and the result is GREAT! Thanks Emeril!

    Since I'm pregnant (and also because I hate beer, I decided to substute 1/2 of the beer with a little milk & sour cream. It thickened up the recipe and kept it from being overwhelming beer-y. Loved it!

    The recipe is great!! Instead of fresh ground turkey, I used some left over Thanksgiving turkey. I just chunked it up and added after the sausage was cooked. I also threw in some pulled pork we had left over - it was fantastic.

    Chili was great, but the recipe lacked instructions on when to add the beans. Maybe, I missed something???

    Other than that, I used andouille sausage in lieu of the Italian. Yummy!!!!

    This is a wonderful recipe- I have made it time and time again...if you dont find all the spices, a quick way to cheat is adding taco seasoning to the turkey meat....great recipe for a football party!
