    Great recipe and SO easy! I made stock last year and this recipe was just SO easy, PLUS, our apartment smelled great while it was cooking. I highly recommend this recipe and I look forward to the yummy recipes to use with the stock. Thanks Emeril!

    This is the second year I have made this stock... what a wonderful use for the carcass instead of throwing it in the trash! It is so easy and smells wonderful while it is cooking. I used part of mine this year for "Turkey Vegetable Soup with Stuffing Dumplings" (just finished making and it looks wonderful posted elsewhere on this site. I will review that after we have eaten it!

    This was the first time I made stock and I plan to do it every Thanksgiving from now on! I hate to waste the rest of the turkey and it was so easy and great for soups! Fantastic!

    i use this recipe when i make emeril's turkey bone gumbo. i tried the gumbo with other stock recipes and it is just not the same.

    I was really happy with this basic recipe. I used a leftover smoked turkey carcas from Thanksgiving that was given to me by my boss from our company potluck. Also subbed sage for the thyme and roasted everything in my 7 qt. dutch oven for a bit before covering with water and letting it go for about 8 hours on Sunday. The result: a very rich stock, perfectly flavored and ready for soups during the coldest months here in Tx - January and Feb.

    This was the first time I have made a stock, and this couldn't have been easier. It smells fantastic, and tastes even better. I used it to make a turkey vegetable soup- Yum!
