    Very Yummy. I did this recipe today for Xmas and everybody loved it. One quick tip though, thyme is something you want to be extra careful with... use just a little bit or it will overpower the whole thing. Mine tasted too much of thyme but I'll be careful next time to use a lot less - there were no leftovers left.!!

    I made this to test it on my friends before I make it for Thanksgiving. Everyone loved it!! I used real bacon instead of turkey bacon. I also made this in my Ronco rotisserie. I had to use wooden skews on the ends to hold it together while it turned (the center was still tied. It only needed to cook for 45 minutes to reach the correct internal temp. Cooking with the rotisserie also frees up the oven for other things like the dressing and corn casserole I'll be making.

    Emeril's Rustic Rub:
    8 tablespoons paprika
    3 tablespoons cayenne
    5 tablespoons freshly ground black pepper
    6 tablespoons garlic powder
    3 tablespoons onion powder
    6 tablespoons salt
    2 1/2 tablespoons dried oregano
    2 1/2 tablespoons dried thyme

    Combine all in an air-tight container and store up to three months. For the one cry-baby, if you cook with his recipes he has also suggested to simply use poultry seasoning and salt and pepper to rub your bird.

    The show has made Emeril and others millionaires. It is so low that one must purchase his rub for this recipe. The same garbage as Paula Deen's Silly Salt. Shabby Shabby Shabby Shabby Shabby Emeril

    I tried this last December and absolutely loved it. I am making it for the family this week and hope that it will become a cornerstone of Thanksgivings to come. It's not big enough for the whole family, but is a great addition for the buffet line.

    It's rather simple to make once you get there, but some items can easily be substituted. I definitely suggest that you try this recipe

    I HAVE NOT MADE THIS YET, BUT WHEN I CHECKED PREVIOUS REVIEWS, I NOTED THAT THERE WAS CONFUSION AS TO WHERE THE RECIPE FOR EMERIL'S RUB COULD BE FOUND. ACTUALLY, IT REFERS TO THE PRODUCT EMERIL SELLS. I LOOKED BACK TO SIMILAR RECIPES; FOODNETWORK WOULD ALSO PROVIDE THE ALTERNATE OF POULTRY SEASONING WITH SALT AND PEPPER TO YOUR TASTE.

    THIS EPISODE IS GOING TO BE RELICAST ON THE 4TH AND I AM GOING TO DVR IT.

    I am assuming there are 2 different rubs used in this receipe. The only that lists the ingredients is the Essence of Emerile but does not list the ingredients for the turkey rub.
