    Pesto mayo makes this sandwich. The recipe is easy to do, if you follow the directions it will turn out perfect. I did add the juice of half a lime to mine. The sandwich is a refreshing meal for a hot summer day. Thanks to other reviewers for giving options for different breads that sound good too.

    I've made this for large family gatherings. It is always a hit. I even made it a couple hours ahead of time and sliced them, refrigerated and they held up just great.

    Wow - this sandwich is delicious and easy. Ciabattas are too hard for me so I substituted with croissants - and it was perfect. I found the pesto to be a bit too oily so next time I make the pesto, I'll add less oil. The cranberries, pesto and cheese on the sandwich makes boring sandwich into something extraordinary.

    this is so good it is ridiculous. i used pesto in a jar and just added it with mayo to tste. i also used some left over salad i add instead of the romaine. it was still good!

    This was a really good sandwich! I don't think you really need to add the extra salt. It was the right amount of salt without the extra added separately. Also, I bought a bag of 4 smaller ciabatta rolls, and used that instead of buying one big one, since it's just me. Then I can make this every day, and nothing is mushy! I pretty much love all of Emeril's recipes!

    I made a variation of this sandwich. I made the pesto mayo exactly as in the receipe and it was wonderful. I made sandwichs with roasted turkey on dark rye with the pesto and a combination of cranberries and cherrys (simmered in orange juice and then pureed in blender. I served this at a baby shower and it received RAVE reviews.
