    My hubby doesn't like it when I make pasta dishes, but I couldn't help notice him getting his 2nd FULL plate of this! What a great recipe to use the extra Turkey (not that I had much leftover since I made Anne's Brined Herb-Crusted Turkey w/Apple Cider Gravy... simply a MUST. I used a pablono pepper instead of the bell, threw in some sour cream and substituted fettuccini for the pasta, yummy! I'm stuffed, once again! Thanks Emeril for sharing!

    Excellent flavor and easy to make. The kids had fun crushing the potato chips! I had fun eating a great dinner and getting rid of leftovers.

    I'm not a leftover turkey casserole fan, but decided to give this a try because of the positive reviews, and because Emeril's recipes are normally hits. I had used Ina Garten's herb roasted turkey basic recipe for a whole turkey breast and used the leftovers in this recipe. This casserole was really exceptional, and I think the herbed flavor of my leftover turkey gave it an additional plus. Using suggestions from other reviewers, I did increase the amount of essence by another 1/2 tsp, and I used about 2/3 c. of parmesean (because I was trying to use it up. Taste the sauce before adding the additional salt called for in the recipe. I reduced the amount of salt to 1/2 tsp because I had salted the water the noodles were cooked in. The dish was fine without it. This recipe came together easily and quickly. The family really liked it, and asked me to remember it for next year's holidays.

    AMAZING.....this recipe was great with our turkey leftovers from thanksgiving. I didn't add any cheese to mine because of allergies but it still came out great. And I had fun crushing the potato chips!!!!

    This was delicious! I followed the recipe exactly as written except I used Emeril's southwest essence. I wasn't sure about the chips on top, but, they added a nice crunch! Will definitely make again.

    Very good! The sauce reminded me of this dish I had at a french restaurant years ago "champagne chicken." Nice sweetness to it without being sweet. Just pleasant. Definitely not a weight watchers meal - but hey, it's the day after Thanksgiving! Personally, I would like to try buttered panko breadcrumbs as a topping instead of the chips, but the chips are good. Others in the house liked the chips very much and called them a nice surprise. Another winner, Emeril!

    I make this every year the day after Thanksgiving. I add a small bag of frozen peas, or frozen peas and carrots - whichever one I can find in the store. This is an awesome way of dealing with leftover turkey. I think the chips as a topping was an original idea and really make the dish. I highly recommend it to others, and have! Thanks Emeril!!

    Absolutely divine! I've used this recipe so many times. My family just loves it and it is so easy to make but definitely takes time. We usually have a butterball turkey breast then save the leftovers just to make this dish the next day. I have to admit though, we didn't use the essence but used italian seasoning (Pampered Chef and Black Peppercorn and Garlic Rub (Pampered Chef in this dish. We have also added frozen peas into it in order to get the kids to eat some veggies occasionally. Simple delicious!

    Loved this recipe! I also used way more Essence, maybe 3 tablespoons, but I am a seasoning freak. Halved the butter, sprayed olive oil on the pan and omitted the shrooms and it was still super tasty!
