    I made this last night for my boyfriend and we couldn't get over how great it tasted. We used bacon instead of pancetta (using a pound package, we had the other half pound leftover for breakfast. We also substituted the can of kidney beans for another can of cannellini and we seasoned the soup with dry herbs as we were sautéing the bacon and veggies. I'd recommend eyeballing the amount of kale you put in as to not crowd the soup; unlike spinach, it will not wilt as readily. For the bread, we seasoned the olive oil and broiled it with some parmesan on top. We'll definitely make this again.

    Made this soup tonight, followed the recipe most of the way, except I used bacon instead of pancetta, and threw in half of a "Jennie-o Turkey kielbasa that I sliced into quarters then into 1/4 inch slices. It was outstanding, even my picky husband cleaned his bowl (never said a word about the kale Will add this to my favorite soup recipes.

    Trying to cook healthier, I try to make most of my bean/vegetable soups vegetarian. This soup adapts wonderfully to that! I make it often as it is so adaptable to whatever beans I have on hand. I will say that it is absolutely better with beans that have been soaked overnight than with canned beans. As many have said, add a good warm and crusty bread and it makes a meal!

    My husband and I loved this soup! We went vegetarian and skipped the pancetta and it was fine. We had white beans soaking for 2 days and had to use them in something. We used a very large leak instead of onion and we had to use up the spinach in our fridge instead of kale. With an extra sprig of oregano and thyme and one more pinch of salt, this soup was hearty, healthy, fantastic!!

    I made this for dinner and it was GREAT! The only thing that I did different I used Roasted Garlic diced tomatoes. Very very easy to make and I will make this again.

    I used canned beans and bacon (didn't have pancetta and it was incredibly simple, fast and really REALLY good. I haven't worked with kale before and I just loved it. It held up in the soup better than spinach does. It adds so much texture to the soup. I will make this again and again.
