This soup is absolutely delicous. I made it to the letter the first time (the herbs are key - do not leave them out and on the second go-around, I discovered that you can omit the bacon and use butter instead. This recipe is easy, cheap, and tasty. What more could you ask for? Don't be afraid of the kale! It's good for you and an integral part of this soup. Just put it in and eat your veggies. Loved this soup, very tasty. I used bacon instead, didn't use rosemary, substituted spinach for the kayle. You can't go wrong with this one, you can put just about anything in it because the base tast so good.

Absolutely LOVE this soup! I skipped the pancetta and used vegetable stock to make it vegetarian and it was GREAT! Makes a LOT so on a cold Sunday it is perfect for sharing with the neighbors and starting the week off right with lunch at work.

Love this recipe. I used all canned beans, and instead of pancetta, I fried up some bits of smoked salmon. Added a little butter and mashed some of the chickpeas for some consistency.
It was delicious!

Great recipe. The only change I made was to run my emersion blender in it for a couple seconds. This gave it a more luxurious and silky mouth feel. Served it at a party and everyone loved it and asked for the recipe.

Delicious! At first, I made it with the Italian sausage, as suggested by some of the reviewers. It was definitely "lacking" something. So I sent hubby to the store for the pancetta, crisped it up on the side and added to the soup, and that made it 5 stars. Hubby hates kidney beans, so I substituted two Yukon Gold potatoes, diced, while keeping the cannellini beans and chickpeas. It was great!
