ABSOLUTELY DELICIOUS! I USED ALL CANNED BEANS AND ADDED A (SAVED RIND FROM PARM-REG CHEESE. I USED ALEPPO PEPPER FOR THE CRUSHED RED PEPPER BUT THEN ADDED THE CRUSHED RED PEPPER AT THE END. I ALSO ADDED A ROUNDED TEAS. OF DRIED SAVORY. USED A BUNCH OF THYME AND OREGANO AND ONE SPRIG OF ROSEMARY WHICH I TIED TOGETHER (FOR EASY RETRIVAL.
EXCELLENT TASTE AND ANOTHER GREAT ONE FROM EMERIL!!

I have made this soup twice. The first time I made this soup was for a family member that came home from the hospital. I received a phone call telling me how good the soup and bread was. The whole family enjoyed the meal.
I liked the soup so much that I made it again for a birthday dinner. This soup was a big hit at the birthday dinner. All 13 people enjoyed this soup. I did double the recipe for this dinner party. This was more time consuming. I am still makings copys of this recipe for family and friends. A healthy meal that tasted great!!!

I really enjoyed this recipe, have made it 3 times. The first time I made it exactly as written and it was delicious! This last time I added a little bit of white wine, omitted the oregano, pepper flakes and added a little bit of cajun seasoning. (Being from the south, I recognize this takes away the authentic Italian flavor but I add cajun seasoning to everything. I throw in about 4-5 sprigs of fresh thyme and this adds a lot of flavor. Used chopped cabbage for the greens tonight and it was wonderful! A very forgiving recipe, add and remove ingredients to your taste! Serve with a wonderful bread.

As always, when raw beans are in a recipe on this crazy site it says to bring to a boil, then simmer for 45 minutes to an hour. It takes minimum FOUR HOURS to cook beans on the stove. Do yourself a favor and use the pressure cooker. Beans in 15 minutes! I wish they'd check these recipes before people believe some of this nonsense.

This soup is great. The heat level is perfect, and I love the mix of beans. I used 1/4 lb of pancetta instead of 1/2 pound, and I think that was fine. Next time, instead of tying the herbs and dropping them in, I will wrap them in cheesecloth. The rosemary leaves fell off the stem and wound up in the soup, which was a little unpleasant. I used canned beans and was very happy with the results. This soup is fast and fabulous!

I've made this so many times and it always turns out great. The pancetta really makes it so I don't recommend substituting it with bacon if you're cutting corners. However I've made this with dried herbs, instead of fresh, and have used different beans and it still tastes delicious. Great for when you're having company on a chilly night!
