    Used hot pancetta and sauteed the kale in a separate pot with a little olive oil Let it cook down for several minutes and occasionally added some of the stock to the sauteeing kale. Added the kale last. Great tasting soup

    I made this on a brisk, autumn day here in New England... Delicious, hearty, and warming. Definitely hit the spot - and it tasted even better the next day. A winner!

    I made a pot of this soup this weekend, and my whole family loved it. My youngest son (who is fairly picky requested some for breakfast the next morning. He referred to it as "the soup with the good green stuff". I've found a way for all of us to get more of the "good green stuff". An absolute keeper.

    I usually need to make full meals. Soup, salad, veg, chicken or meat, potatoes or pasta. BUT this soup is a meal by it'self! We are not even soup people but this is delicious! I wish food network gave us cooking time if you use canned beans instead.

    I found this soup to be very easy to make. I make it the night before so I would not have as much prep to do for our meal. It had a chance for all the flavors to blend. Easy to reheat and still taste superior! All of the guests loved the soup and all asked for me to make it for our next gathering.

    Along with other reviewers, I used canned beans and center cut bacon instead of the pancetta. This soup is great! My family and neighbors loved it. This recipe is a keeper for any family. Truly wonderful!

    The only change was I added apple wood smoked bacon instead of pancetta..Great flavors and good for you. Easy too if using canned beans..Great recipe Emeril!

    I have made this a couple times and it is excellent. I used canned beans to shorten prep time...its such a good for you soup too. Really full of great flavor. This and some good crusty bread on a winter night and you are set. Will easily make this recipe once a month, if not more.

    Used canned beans, ham instead of pancetta, and fresh baby spinach instead of kale - everything else by the recipe. Was really good. Didn't need any added salt - salt from the meat, broth and cheese was plenty. Very flavorful. Will definitely make again.
