    Instead of adding all the different kinds of beans, I just used 3 cans of Cannelloni white beans. Not only did it shorten the prep time by hours, but it was also the perfect (and really only bean needed for this dish. There are already so many components that I found it unnecessary.
    In addition, I threw in some nice croutons instead of toasting my own bread. Made it easier.
    Next time, I'm going to add some spicy italian sausage a couple minutes after sauteing the onions and garlic (I added shallots too.
    All in all, this dish was a success!!

    I used leftover spiral ham instead of pancetta, and substitued black eyed peas for the chick peas. My family loved it....Will definitely make this one again.
    One bowl was not enough. Crusty bread a must on the side.

    The flavors in this soup are excellent. It's a light hearty soup that works well for the later fall/winter. Definitely agree with the previous review, in that you cannot just have one bowl!

    I've made this a number of times and absolutely love it! I've been known to add a little chicken to sneak in more protein for the kids, but it's wonderful as it! The kale is a must...don't be a baby...eat your greens, they're so delicious in this stew!

    I use canned butter beans and navy beans, but you can use whatever you have on hand and it turns out lovely. I also omit the meat and use veg stock, and end up with a fresh, healthy, fast vegetarian soup!

    This was great soup! Very simple if you use can beans...Also, I am vegetarian...I ommited the pancetta for a few tablespoons of butter and used vegetable broth instead of chicken broth. It came out fabulous.

    This soup was just wonderful! My family loved it. I used can beans for time reasons. And I couldn't get fresh herbs so I just through in some dried. But it was truly fantastic, I also added a couple shakes of Emeril's Essence powder. Served with homemade garlic bread, this was a BIG hit.

    This soup was easy to make and so very tasty. It sounded like a lot of kale but it does wilt down and really adds something to the soup.
