    The first time I made this, I made it with maple bacon and everybody was raving about how good it was. The second time I made it, I used original bacon and everybody was asking where the maple flavor was. Maple bacon makes this recipe amazing!!!! :

    Made this for Christmas dinner and was a huge hit, everyone loved it and insists that becomes a staple at future family gatherings. I followed the recipe exactly but was a little concerned that the crispy bacon would be too crunchy...it wasn't. Made the night before, refridgerated and took out about an hour before cooking.

    What a treat and saving the time to stuff the individual skins as well. I did save the skins, torn some in half and lined the sides of the dish for the skin lovers (about 5 skins torn in half. Did not have the full cheese needed, only 5 oz sharp cheddar and 2 cups shredded but I don't think the taste was lacking. It was very good. I prepared it the day before (uncooked and stored in fridge. Let out at least 1 hr before baking to take the chill out. Baked 45-50 min and saved some top cheese for the last 10 min. Served 8 healthy servings w/lots left over. Good job Emeril!

    Very tasty, indeed! This was a big hit! I used cream cheese instead of the cubed white cheddar. It was what I had on hand, and it worked really well. Very cheesy, very good! Thank you for the tip to bake the potatoes the day before. It was very helpful. Also, this made so much casserole, that I had to use my deep dish lasagna pan.

    I made this for Christmas yesterday to go with a Rib Toast. I followed the recipe exactly as far as ingredients, etc. I did line the bottom of the casserole with skins like others have said as I have potato skin lovers in my family, the casserole itself is so good they didn't even care for the skins!! This makes a LOT of casserole, next time I will use about 3/4 of the recipe for a casserole and stuff some of the skins with the remainder for another meal!!! If you bake the potatoes the day before it won't take as long to make. Everyone in my family had seconds (or thirds!

    i made it a lil different so it could be made the main dish. i sub. sausage for bacon and made almost like a upside down shep. pie oh and i put the potatoe shells on the bottom. came out super yummy kids even loved it.

    This tasted GREAT but the one thing I will say is I feel like the timing listed is a little on the low end. Part of it is because I may not have had the proper tools/technique, but this took me longer then the 2 hours they said it would. WORTH it though!
