Good ol' potatoe casserole
I have been making this for quite some time. To cut the cooking time in half I boil the potatoes instead of baking them and it comes out great! Also I never use the onions. I always get compliments on this recipe and best of all my kids love it!

Potluck Dinner: Old School Eaters Say, "Best they've ever had!"
I put this dish together for the first time, a bit of a gamble, exactly per Emeril's recipe the night before, then baked and served it next evening after refrigerating for about 24 hours. First time recipes usually need "tweeking" to make them better in subsequent attemps, but this one, no way! It's perfect, a superbly delicious winner. Thank you Chef Lagasse. Wow!

my lower fat version
I only used 1/2 the butter, 1/2 lb of each cheese (it could take even less shredded cheese) 1%fat yogurt for sour cream and it was still delicious. I made this for a football game potluck brunch and it was a hit! Don't be turned off by the obscene amounts of high fat products...make it my way and it isn't unreasonable. I will sooo make this again!

deliiiicious!
I have made this recipe for Thanksgiving, Christmas, and Easter. I always get compliments on it, and there is never any left...and it is a huge recipe! I have never made it with the onions and often only bake it with bacon in half for those that want some. It's pretty hard to look past all the fattening ingredients in this, but I guess it's only for special occasions after all.

Delish!
Delicious casserole. Needed to cook potatoes longer than 1 hour 15 minutes -- probably closer to 1 hour 30 minutes or more. Would make again for sure!

A new favorite
This is a wonderful recipe! I made this for the first time last week and my husband is already begging me to make it again tonight! The recipe is delicious. The chunks of white cheddar and green onions really make this recipe something special.

very tasty
I loved this casserole and it makes a TON so it's great for big family functions... Next time I think I will make the mixture but put it back in the potato skins and bake... I felt like I was really missing the skins although this is supposed to be a casserole.... :P and go easy on the onions... they were a little over-powering so be aware of how strong of onions you brought home to use, just use caution. Overall, great dish :)

Family pleaser
This is one our favorites recipes from Emeril's pootluck cookbook. If you have hungry guys to feed for a cookout or barbecue, this is the casserole that you should serve. There isn't anyone who doesn't love it, except for those picky anti-onion people....just don't invite them :-)

Good
I had this at Easter and I just made it again for a pot luck. I have an 11x8 pan so I used between 5 a 6 lb taters and 1/2 lb each of the cheeses, and a little less of everything else except for the bacon :-) My thought is why is a cube of butter needed. There is so much fat in the cheese and sour cream already and the eggs provide binding...I just think it would be possibe to put away so much more of this without the "grease" factor. It's delicious though. At Easter, as I helped myself to more I said, "I can't even pretend I don't want more."

Get ready for a flavor explosion!
I have never in my life of cooking have I ever had so many compliments on this recipe. So many wanted it too. The flavor explodes in your mouth. This is by far the best tasting potato casserole I have ever made. I am so thankful this was shared on Food Network!

This dish was a big hit with the family, and why not... bacon, a mountain of cheese, heavy cream, potatoes. My only criticism is that it took longer than the 20 minutes of prep time noted on the recipe. I'd say it was double that, what with the chopping, scooping, grating. I cooked the bacon in the oven. If I were smarter, I would have roasted the bacon at the same time as the potatoes... live and learn! Once everything was ready, the dish came together very easily. There was such a ton of food that I found mixing it with my hands was the only way to get everything evenly incorporated. Delicious food, and enough for left overs the next day.

Hubby's new favorite!!!!!
I made this dish one night to go along side my "Famous Pot Roast". I am almost sad I did. It completely stole the show! In all of the hustle and bustle of a chaotic house with children running under my feet in the kitchen, I had forgot to add in the eggs. It was still amazing and my husband has actually requested these be the only potaotes I make again. I can't wait to try them again and add the eggs this time!
