This was excellent. Instead of baking the potatoes I boiled them with the skins. Very tasty !

This recipe is amazing. While it was more work than I originally anticipated, the results were well worth the work. The directions were easy to follow, and the end product was fantastic. This is a keeper!!! EXCELLENT!!

Followed the recipe and I thought it was good, not great. A lot of work/time for a dish that could be a little more flavorful.

Yum! I made this with "fake butter," fat-free sour cream, and fat-free 1/2 & 1/2. Next time I will use reduced fat cheese and turkey bacon to make it a little healthier. Anyway, I took this to a church potluck today, and came home with very little left and 5 "do you share recipes, because I want this one!" Out of a church that currently has 20 members, I think the amount of requests is awesome!

Whoa! Everyone loves these potatoes. Great with prime rib, rack of lamb (Emeril's mustard-crumb coated--"the best, Jerry, the best", grilled chicken--anything! I often bake early, then gently reheat to serve. Can freeze. Terrific.

BAM! Way to go Emeril! The best potatoe casserole I have made yet! I made this casserole for Christmas dinner as a side dish to prime rib! I followed the advise of another reviewer and lined the sides with halved potato skins that were left over from the baked potatoes. My family loved it! It was a nice presentation with the potatoe skins lining the dish and offered skins to those who wanted them. A little putsy but the payoff is big and worth the time.

I wanted to make my twice baked potato but b/c my daughter was serving a prime rib I thought it might be a little better to make a casserole. This recipe was fantastic! It was very similar to my twiced baked potato's so I thought I would give it a try. My son in law is very difficult to impress and he can't stop talking about these potato's. Great for kids too! I gave the kids the leftovers and they used them for breakfast burritos the next morning. When my daughter said she was doing italian next year her hubby said no way. He wants THOSE potatos and ham.
