  This recipe is wonderful. If you are looking for a good recipe-This is it! Some recipes say to boil the potatoes--Then it wouldn't be twice baked and the flavor would not be the same. Make as directed and you will love it.

  I made this for a 60th birthday potluck knowing the hosts were supplying sliced tri-tip and bbq salmon. I made a double batch, so it was a bit time consuming, but forgiving. I baked, scooped, smashed and added butter and cream the night before -got tired- and finished with everything else in the morning. Baked it before we went and it was gone, gone within the first 15 minutes of seving time. Good thing I saved a bit out to try the next night with our own dinner. I really enjoyed this and would like to pair it at Christmas when I usually do twice baked potatoes and Prime Rib. You could do it back in the potato shell too with great results. Just depends on your own likes. Will definately make again!

  Can't imagine a more perfect potato casserole. It's a "do ahead," with little cleanup. Yes, it's full of fat, but also full of flavor! You can cut back on some of the ingredients, and use some lower fat substitutions, but for a holiday or special occasion, go for the real thing, and enjoy. You did it this time, Emeril!   Made these for the first time for Xmas dinner with a ham - OMG they were sooo good - everyone raved about them. Didn't bake mine - peeled & boiled them - just delicious!!!!!!!!!!!

  I made this for a friends birthday and everyone loved it, nothng left over. It was a lot easier than I thought it was going to be to make. I am not able to find the white cheddar so have to use reg. I think this will now be a new dish we take to all the gatherings and for holidays.

  When i made it there was nothing left over. It was so good and very easy to make. I used chives instead of green onions though because it has a more mild taste. Everyone should try this dish

  Definitely worth it. This is restaurant quality, holiday good. Easily can be halved, but as much as everyone liked it, I could have made the entire quantity. Just follow the recipe and enjoy.

  Great combination but we saved the backed shells and just refilled them like the original twice baked and the bacon bits on top. What you get is no dishes to wash!

  I have been making this for quite some time. To cut the cooking time in half I boil the potatoes instead of baking them and it comes out great! Also I never use the onions. I always get compliments on this recipe and best of all my kids love it!

  I put this dish together for the first time, a bit of a gamble, exactly per Emeril's recipe the night before, then baked and served it next evening after refrigerating for about 24 hours. First time recipes usually need "tweeking" to make them better in subsequent attemps, but this one, no way! It's perfect, a superbly delicious winner. Thank you Chef Lagasse. Wow!
