Emeril, Emeril, Emeril, you nailed it once again! added a bit garlic but that was the only change. It's not health food but it's worth every mouthfull anyway. This will replace my mashed potato's at Thanksgiving and who knows, maybe Christmas as well!

I have never served this when at least one person didn't ask for the recipe. A real crowd pleaser. It's my go-to recipe instead of making regular mashed potatoes, especially now that I make it a day ahead of time and bake the day of.

I wasn't too sure about this dish (because the picture isn't that great, even though the reviews were all stellar. But I made it and OMG, its absolutely delicious. I had so many compliments from my guests on it that I'll be sure to make it again. We fried up the leftovers the next day and double amazing! Definitely recommend making this.

OMG! This is the best ever! Easy to make, perfect flavor and texture - AND the left overs freeze beautifully! I finally love my own cooking - maybe because it is really Emeril's cooking!

All I can say is wow, Emeril does it again! I made this last night for Father's Day and it was a big hit! To save time, I baked the potatoes the night before, let them cool and scooped out the flesh the next morning. Easy!

This is one of the best dishes in my arsenal of recipes. If you like Potato Skins, you will love this dish. Thanks Emeril!

As my 20yr old Daughter said..It's the BOMB. I halfed the recipe since there are just us 5, and I can't put away food like I used too..lol. It didn't make past breakfast the next day as I fried up the last of it..It was FANTASTIC ! I did as one reviewer mentioned and lined the dish with skin's, as us 3 guy's in the house love'em. Then julliened (sp a bunched and put them on top. It was good enough to make me register so I could put in my 2 cent's ! If I keep making stuff like this, my Wife will stop cooking !!

This is by far the best potato recipie ever. My family loves it so much that i actually make it in individual serving dishes and freeze it. More times than not I find them eating the potatos as a snack. Wonder why I am always the one who gets to bring the potatos to the party :

This was without a doubt awesome. The only thing I did differently was add a smokey, spicy cheese and three cloves of minced garlic (we are big garlic eaters in my house. I covered it for the first 30 minutes then uncovered it the last 1This was completely awesome and will definitely make it again!! Thank you Emeril!!

I'm a complete novice and my guests said this is one of the best things they'd ever had. A lot of steps, but worth it.
