Can't imagine a more perfect potato casserole. It's a "do ahead," with little cleanup. Yes, it's full of fat, but also full of flavor! You can cut back on some of the ingredients, and use some lower fat substitutions, but for a holiday or special occasion, go for the real thing, and enjoy. You did it this time, Emeril! Thanks for the memories.

The other reviews were correct, it makes a ton of potatoes. But this is the way I will make twice baked potatoes from now on. Thanks Emeril.

I made this for a friends birthday and everyone loved it, nothng left over. It was a lot easier than I thought it was going to be to make. I am not able to find the white cheddar so have to use reg. I think this will now be a new dish we take to all the gatherings and for holidays.

When i made it there was nothing left over. It was so good and very easy to make. I used chives instead of green onions though because it has a more mild taste. Everyone should try this dish

Definitely worth it. This is restaurant quality, holiday good. Easily can be halved, but as much as everyone liked it, I could have made the entire quantity. Just follow the recipe and enjoy.
