I'm a regular visitor to my local Chinese market, and red bean paste is by far my favorite thing there. Who could resist the smooth, creamy indulgence of it? But for years I have bought store-bought paste out of a can because I just couldn't find a recipe for it that worked. Then I found this. The recipe is as authentic as the stuff I buy at the market, and it couldn't have tasted better. Thank you Emeril, for giving me the recipe I've been looking for! (by the way, red bean paste is a GREAT substitute for jelly on your morning toast =]
