The combined flavors of the veal, crab, and mushrooms were a bit hit with the palate. We used veal scallopine and baby portabello mushrooms instead of button. Also, we used a lemon juice, melted butter, garlic and cayenne sauce instead of the hollandaise. Fantastic! Served with a side of gnocci with olive oil, basil, thyme, oregano, and whatever spices you wish! Enjoy!

Easy, basic technique. Guaranteed to be served for the rest of your life.
If you want to get crazy, incorporate some Saltimbocca ingredients. That could be the best.
