    This is very good using white cheddar. A little time consuming but worth it. My son and I enjoyed the parsnip puree--we like parsnips and it was nice to eat something creative and not run of the mill just like any old quesadilla. If I make it again I will make twice as much onion marmalade as it called for because that was my favorite part of this dish. A gourmet take on an old favorite.
