    I love this recipe. The pork was a little nerve-racking to get the right temperature twice. Definitely, use a thermometer. I used celery, onion and garlic with salt, pepper, oregano and lemon juice for the vegies and used feta for the cheese. I was so excited about how the recipe was turning out I forgot the sauce, but it didn't need it.

    the vegetable stuffed pork tenderloin en croute with creole mustart cream sause was fantastic, however, the cooling time for the tenderloin both before and after it is wrapped in the puff pastry extends the prep time a bit. i'd suggest browning the meat and preparing the sauce the day before. also, plz tell emeril that there IS smell-a-vision, at least in michigan. i had bariatric surgery august 2 and have smelled everything he has cooked since then, sorry to burst another myth......

    The layered flavoring of the sauteed veggies, seared pork, puff pastry with the fantastic sauce made a boring pork tenderloin exciting and special.

    I served this at a party and everyone loved it. I prepared the vegetable filling and the sauce the day before, then did the rest on party day. It turned out perfect. I had just a few leftover slices in the frige and one of my guests stole them!
