    Got great reviews from my family! Quite spicy - even without the 'Essence' topping - but I like spicy food. I didn't have serrano peppers, so I used 2 jalapeno peppers and that was perfect. Didn't have zucchini, so just substituted potatoes. Don't like mushrooms, so left those out. Still delish. I added sour cream and cheddar cheese at the end for garnish, plus a little cilantro, and it was very yummy. Definitely a keeper!

    Tasted great! Even my 12 year old loved it. He said he hated vegetarian food (unless it's this kind of vegetarian food ha!
    It really doesn't need the rice..next time I'll serve solo.
    I agree with shopaholic though...the cost of all the veg was higher than I would normally spend for one meal.

    It was amazing and quite a hit with my family and friends (even the carnivorous ones!!! It was spicy enough for most people but then some wanted to add the Creole seasoning (at the bottom of the recipe as well and their faces turned RED! All the time spent is in the prep. I also noticed that my grocery bill at Safeway was a hearty one because of all the fresh produce. That being said, there was enough to feed 5 hungry people and have some for leftovers. So the recipe can be stretched. I've already gotten requests to make it again! :

    Delicious. This is the first time I've had chili since I became vegetarian, and it's just as good as the best meat chili. Thank you, Emeril!

    Amazing, absolutely AMAZING. I usually add cheese to everything. I ate the chili before I added cheese, it was amazing. I added cheese later and it did not compare. It is amazing that this chili was so great, that I the person who adds cheese to everything liked it by itself WITHOUT cheese. I was Amazed. Great recipe, a blend of perfect flavors. I will continue to make this, over and over again.

    This is delicious! I've paired it with rice, millet, and sweet-potato oven fries. It was delicious with everything. I used crimini mushrooms, I didn't have a zucchini or an avocado on hand, and I didn't prepare Essence-- it was spicy enough without it. I'll certainly be making this again. It's my new favourite chili recipe. Thanks, Emeril!

    Lots of prep time, but so yummy and healthy! My carnivore son didn't even complain about no meat. I didn't have regular paprika, but used smoked paprika, which was awesome. The day after I made this, we had people over and I mixed in some of the chili with velveeta and served with tortillas chips. Still had left overs the next day and served with hamburger buns. Delicious!

    My Fiance and I are doing the Daniel Fast and we have been trying to be creative about what to eat..I must say this was a party in my mouth today! after a few days of eating solid salads and fruit ONLY this recipe was just what we needed! we did not have the zucchini as the recipe demanded but we substituted it with eggplant cut into small cubes...it was YUMMY..I had to make sure to swing by and say THANK YOU on behalf of all of us!!! <3
