    This chili has become a staple at our house. We don't miss the meat at all and it is a painless way to get some veggies in! Very simple to make, in a pinch, you can sub regular mushrooms for portabello, canned corn for fresh, and no need the serrano peppers - although they do add a nice kick!

    Everyone loves this recipe!! Try grilling the bell peppers and corn on the cob till its nice and charred, it really adds to the flavor quite a bit. I have even cheated and used canned corn that I blackened in a skillet, and canned diced tomatoes. It's still wonderful and everyone asks for the recipe.

    By far the best vege chili to date!
    Had one vegetarian son, 11 of his hippie friends and three meat eating guys in the house who devoured it. All gone! (Doubled the recipe for that group.
    Note: I've made this many times, for many years and always triple or quadruple the amount of broth. Otherwise it gets too thick and mushy.
    Another house staple!

    Loved this recipe! One of the best chili's I've ever tasted. I left out the mushrooms and added a little sour cream on top. My whole family loved this one, even my 3 year old.

    This recipe was delicious! I always love chili on a cold fall evening and this chili sure hit the spot. It is a little bit spicy but not too bad. Give this recipe a try!!!

    This recipe was so easy and good! I did not use mushrooms in it and the condiments I used on top were scallions. I also made a boxed corn bread and crumbled some up and put it in each individual chili. Delicious!

    I am joining the chorus of satisfied reviewers. This was hearty enough to satisfy my husband and I and we are BIG meat eaters. Nice flavor combination--tastes like tortilla soup without all of the canned vegetables.

    Came out perfect both times I made it. Was surprised how good it was when it came out the first time and even more surprised that it lived up to what I remembered when I made it the second time.

    Like mushrooms, but at the request of others made it without them. Used canned corn and beans to save time. Deliciousness
