I made this for a new mother who was also a vegetarian. This recipe was easy to prepare, made my house smell amazing!, and made enough to share. My husband said if I hadn't told him it was vegetarian who would have never guessed. It's a different take on chili that takes it to a whole new level. If you are even reading this, try it, you will love it.

This Chili the first time I made it took a while to make, but oh was it worth it. It is a very hearty chili full of flavor and texture. I thoroughly enjoyed every last bite.
This is one of two chili's that I make and I have to say, with the time and effort that this one takes, I tend to make this one more often. I have substituted some ingredients to save time such as frozen fresh corn off the cob. I also have added ingredients as I am a big fan of spice. As always, it's topped with essence - I go through so much, I've learned to make my own. and even carry with me when I go out

This is the best vegetarian chili I have ever tried -- and I have tried a lot of them. It also tastes the most like the real thing. If you are a meat-eater cooking for a vegetarian, this will not leave you feeling as if something is missing. The mushrooms add a distinctly "meaty" flavor and texture. Try cooking the rice with vegetable stock instead of water.

This was a great variation on chili. The vegetables are an unexpected and wonderful accompaniment.

though i modified this recipe a bit to fit my own tastes, i thought the spices and basic ingredients here were vey good and very very filling. if you don't like your chili hot, steer clear, but if you're a fan of hot food, this will make your mouth happy. also, let this chili sit in the fridge for a day or two to experience it at it's best flavor.

All the chopping aside, this recipe was fairly quick. That being said, this is one of the best chili recipes I've ever made. Most of those who ate it commented this chili was better than the majority of meat chilis.

This is easy to make and very tasty. It has a nice kick to it. I didn't miss the meat at all.
