Phenomenal! Best Venison Ever. The family likes their venison Plain and Simple while I like a little sauce, so we usually disagree on recipes - but we ALL loved this. Easy to make, too. I did make substitutions using what I had in the pantry: Riesling for the port, beef stock for the demi glace, and brown rice for the polenta. Yum. This is a keeper.

Very good. The meat was tender. I used Chicken stock instead of the demi-glaze and it was still good.

My husband shot a young deer and I have been trying to use a package of it each week. I had all of the ingredients in house so I decided to try it. Oh my, this is a winner. For all of you hunters out there make this dish. I actually printed it out so I would't forget it. Thank you Emeril

In one word 'AWESOME". The venison was tender and the sauce was fantastic. My husband thought it was the best sauce he has had with venison. I must agree, it had such a wonderful flavor that complimented the venison so well. I think next time I will try to thicken the sauce just a bit with a beurre manie instead of just the butter at the end. I will definitly make this recipe again. Thank you Emeril for another great recipe!

Made this quite awhile ago. I used short ribs instead of the chops and brown gravy instead of the demi glace. It was finger licking good. Definately will make this again. I did not make with the polenta, but I am sure it would have tasted great with the sauce from the pan.
