Ingredients

  • 1 loaf Ciabatta bread sliced into 4 (3-inch thick) slices (can be substituted with crusty
  • Italian bread)
  • 1/4 cup pate
  • 8 ounces Brie cheese, sliced into 8 pieces
  • 1/4 pound Speck, sliced paper-thin (can be substituted with prosciutto

Directions

Cut each 3-inch slice of Ciabatta horizontally to make a top and a bottom piece. In a toaster oven or a sandwich press, toast the Ciabatta for 2 minutes, or until lightly toasted. Remove bread from toaster oven and spread each side with some of the pate. Place a slice of Brie cheese on each side. On one side, place 1/4 of the speck on top of the Brie cheese. Place in the toaster oven for 4 minutes, or until cheese is beginning to melt. Remove from the toaster oven and place the piece of bread with only the pate and Brie, on top of the piece with the Speck. Press together. Slice the panini in half.
