    I didn't have quite enough noodles, but doubled the crab and added bean sprouts and cucumber. I found it light, refreshing and tasty. But, next time I think I'll use the dipping sauce recipe I have for Vietnamese spring rolls which is equal parts lime juice, fish sauce, and rice vinegar, plus the sugar, garlic and red pepper flakes like Emeril's dressing recipe. Emeril's dressing recipe didn't have enough zip for me.
