Ingredients

  • 1 (2-pound) salmon fillet, with skin
  • 1/2 cup kosher salt
  • 3 tablespoons sugar
  • 1/4 cup chopped fresh dill
  • 1/4 cup lemon-flavored vodka
  • 2 tablespoons grated lemon zest
  • 2 tablespoons grated lime zest
  • 2 tablespoons grated orange zest

Directions

Remove any tiny pin bones from the salmon with a pair of needle nose pliers or tweezers. Rinse the salmon under cold running water and pat dry. Place salmon, skin side down, on several large sheets of plastic wrap.

In a small mixing bowl, combine salt, sugar, dill, vodka and lemon, lime and orange zests. Spread the sugar/salt/citrus mixture evenly over the fleshy side of the fish, pressing it into the flesh. Wrap the salmon tightly in the plastic wrap and place skin side down n a large baking dish. Place a flat glass or ceramic dish on top of the salmon and weight the dish with several heavy cans or a brick and refrigerate for at least 24 hours and up to 48 hours.

Unwrap the salmon and rinse all of the cure off under cold, running water. Pat dry and slice diagonally into paper-thin slices.

    Great Idea

I thought this recipe was great. I cured my salmon for 24 hours but would recommend letting it sit in the frig for a bit... longer. There were some parts closer to the skin that didn't look as tasty. I would definitley make this again for brunch or holiday parties.Read more

    Not worth the trouble

Rated: 2 stars out of 5
My husband is a commercial fisherman in Alaska, so I am inclined to say that he knows good fish. He just brought home a... salmon, so I gave this recipe a try. It was WAY too salty. I soaked it in water for 15 minutes to get some of the salt out, then soaked it in more vodka for another five minutes. It is fine, but not worth the trouble. I was really looking forward to it. I thought about cutting back on the salt, but my husband said it wouldn't cure properly.Read more

Have made this recipe for years now! I'm 'required' to make this and bring it to just about every party I go to, sometimes... making me think they want the salmon and not me! (smile....) In any case...this is the best!Read more
