I only made the waffles, but they were very good. I added just a bit more sugar as we tend to like sweeter waffles here, but followed the rest of the recipe exactly. Almost everyone in my house had seconds! That's how good they were! Perfect, light, fluffy, and delicious waffles. I will use this recipe many more times in the future I'm sure!

How long will the syrup keep?

Solid waffles. Very "eggy" with spongey, not fluffy, texture. I prefer less eggy. Might try it with two eggs, but I'm not sure what that will do to the texture. Didn't try the sauce. My whole family ate them without complaint.

The waffles themselves are some of the best I've ever had. I love the flavor combination of the orange juice and strawberries, though I think the syrup could use a little less sugar. This recipe also goes well with some homemade whipped cream.

These waffles are very light and airy - perfect summer waffles. I liked the strawberry syrup, but it's heavy jamminess contrasted uncomfortably with the lightness of the waffles. I think the strawberry syrup would be great with heavier waffles in winter, and I'd just scatter fresh berries and a very light syrup over these light waffles.

Excellent! They are light, airy and melt in your mouth delicious. I let my batter rest for about 45 minutes before I used it. I also put a few blueberries on top right before I closed the waffle iron. Only pure maple syrup will do these beauties justice :

OMG Emeril I love you. Your recipes never fail and I have made quite a few of them. As usual this waffle recipe rocks. I have never had a waffle anywhere that satisfied. Not in a restaurant, not the frozen variety and nothing out of a box can compare to this. I always turn to you when I'm searching for a good recipe for something. These waffles were by far the best I ever tasted. I made them tonight for my son and he thought they were so delicious. He wanted me to use a box, but I assured him, this was by Emeril. And it was so good. Didn't try the syrup yet, but will make these waffles forever. Very versatile. Thank you.

I only used the strawberry syrup recipe, but it was delicious. Using fresh picked strawberries I cut the sugar to 1/4 C and it was plenty sweet. Used 1/4 C orange juice. Added a little bit of pectin at the end to thicken it up a bit (because I had it on hand from making jam. Love fresh strawberry season, and this is a keeper! Tasted wonderful on whole wheat pancakes with fresh made cream.

Excellent recipe! The batter seemed too thin to me but I used it anyway with great results.
