It is strange that what Emeril did on the show differs so much from the recipe here. I just watched the episode, and here's what he does: He adds chopped bacon, celery, red onion and salt and pepper to a pan, sautes briefly. Then the cooked potatoes, extra virgin olive oil, and sherry vinegar (he says 1 part vinegar to 3 parts oil. He finishes it with fresh chives and "other fresh herbs" (he doesn't say what--they looked like maybe chervil, or oregano, or flat-leaf parsley. Hope this helps anyone who wants to make this dish.

1 Star since I can't rate this recipe as there are 2 versions: the one done on TV and the one given on the website. What's the sense of doing it one way on TV(that actually looks tons better than the website recipe and then giving a different recipe??? Confusing so I haven't made it, hence the rating.

On the show, he put in bacon, chives and no red peppers....the recipe on the show looks loads better than this one. I'm confused? In any case, I'll do the version on the show for sure.
