    This bread is so moist and flavorfull. Last year I shredded zucchini and froze. So after thawing and squeezing it dry I was able to enjoy all winter long. The people at work would also bring me zucchini and ask for a loaf in return. YUM.

    I didn't have nutmeg or lemon and I used choc chips instead of walnuts. Was a little taken back as to how thick it was. Like peanut butter. Turned out AWESOME!!!!

    My boyfriend came home as I was baking this and the first thing out of his mouth was "WHAT is in the oven!??"

    It was delicious! I double the recipe (due to having so many zucchinis. I didn't have a lemon on hand (rare, so I used orange zest...a bit more than the recipe called for. I read the reviews and did not squeeze out the zucchini. It turned out perfectly! Will be taking a loaf over to my grandmother tomorrow. :

    This bread is absolutely delicious. I doubled the recipe. Instead of 1/2 cup of oil (after doubling, I used 1/4 cup applesauce and 1/4 cup of vanilla yogurt, and didn't completely drain the zucchini. It turned out perfectly moist. Also, watch the cooking time. I took mine out at about 50 minutes because it continues to cook a little while cooling, and I wanted the center really soft and moist. I added chocolate chips to one loaf at my husband's request! Yum!

    I have made this recipe so many times because it is delicious! I always add a little more zucchini because I use whole wheat flour and the extra zucchini keeps it moist. The lemon zest is what makes this recipe over the top yummy! It adds a freshness to the bread. I make muffins with this recipe because it makes single portion sizes that are great for taking with you anywhere. This is especially good on a cool fall or winter night.

    I was a little skeptical after reading some of the reviews that this was dry. The only thing I changed was not squeezing out the grated zucchini. I doubled the recipe (since iIhave zucchini coming out of my ears and it was moist and delicious. A keeper!

    Hand down, this is the best zucchini bread. I've made it for my family and friends multiple times. Each time, I've had people ask me for the recipe. And that bread is gone within an hour. It is that good!

    Growing up, our family business was a bakery. This recipe is a wonderful example of the large-scale zucchini breads we would make in the summers, when zucchini was growing abundantly. This warm, simple, flavorful quick-bread takes me back to my childhood. Thank you for sharing such a simple & delicious recipe!
