    This is the best zucchini bread I've ever had! It's a little messy to make if you don't have a food processor but it's really good!

    This is the lightest, most perfectly textured quick bread I've ever made, BUT the oil was doubled, as was the baking powder and soda. It only baked for 30 minutes in a standard metal non-stick bread pan. The sugar should be reduced by half b/c it was too sweet for a savory bread and the zucchini amount could be doubled as well.

    I was awaken on a Sunday morning with, "mom please make me some zucchini bread" it is something I have tasted before and I thought ok, this should be rather simple to make. I advised my son to pull up a recipe and he went straight to the one that Emeril listed. I had everything for it except the zucchini and the lemon zest, we put it together, baked it and it smelled up the whole house indoors and door step. It was so delicious!!! We really can't stand a lot of nuts in our breads so we used about a 1/4 cup and crushed them a lil bit, for the lemon zest I cut back on that a tad too. It was the easiest and best thing I have baked in a long time! My 9yr old has had a pleasant and memorable experience in life thanks to this recipe.

    I made mini loafs and baked for 35 minutes... makes 8. It was tastey but there wasn't that hint of zucchini. Not exactlly as good as my mom's but I will never have her recipe so the search continues... I would make this again.

    Good flavors - lemon zest gives it a kick. BUT - it is dry. I agree to add more zucchini or something else for more moisture.

    This bread is wonderful its a bit cake like but I like it better the next day after is has had some time to cool and become a little more like a bread instead of a cake.
