The recipe was easy and delicious. I subsituted low fat, low sugar vanilla yogert for the oil. It was still moist and much better for your heatlh.

I loved the flavor of this bread. When warm it is like a dessert. I made two loaves and one fell apart when I turned it over because I only let it cool 10 minutes. Still tasted great, though.

BAM!! Emeril has done it again. This is the PERFECT comfort food. This bread is great as a breakfast bread or even as a dessert. Zucchini bread has the same texture as banana bread and it's sweet. Plus how often can you put a vegetable into a bread and have kids fighting over the last piece? I highly recommend this recipe to all Zucchini Bread lovers and to anyone who just wants to try a new recipe.
