    As one born in the West Indies I can say that this is an authentic curry recipe. I tried it with beef to make beef and potato rotis, (I thought I'd try someone else's recipe for a change, and now I use it whenever I make roti.

    This is a fantastic curry dish. I have been experimenting with different types of curries and this one may be our favorite so far. I used 4 whole leg quarters and the meat literally fell off the bone. It did make lots of sauce, so next time I will be sure to add even more chicken to it. The only addition I made was a sprinkling of cayenne, as suggested by another reviewer. That added a nice balance to the sweetness. Instead of rice, I baked some organic sweet potatoes and served them smothered with the curry sauce. YUM! I actually preferred that to rice. We are looking forward to eating the leftover sauce, and I may add some shrimp to it.

    I was so happy with how this dish came out. It was great. My mother and aunt gave it a 10 out of 10. I am from New Orleans so I like my food spicy. I would just add 1/4 tsp of cayenne pepper to heat it up. I served it with Basmati rice, peas, Nana and mango chutney on the side. Delicious!

    I make this receipe all the time...Recently I have made it in the crockpot and it tastes even better. No need to look for another recipe for curry chicken

    Excellent dish, and the roti is so easy. We love this as a company meal as it surprises our guests how much they enjoy it. To Peggy: I'm writing this the same day you're having problems with your recipe box, and I'm having no trouble at all at 9:35 pm ET. I love the recipe box feature of the Food Network!

    Sounds wonderful and can't wait to try! Tried to save recipe to my recipe box but it wouldn't work. Is anyone else having problems saving recipies?? Food network PLEASE help!
