Have made this twice for a group of people. It is delicious! Rich and sweet. Bought crusty peasant Pano bread from Whole Foods, cut into cubes, let sit out for a couple of hours (didn't have time for day old bread, and only let custard soak for 15 minutes before baking. Sauce only takes 5 minutes - and is a perfect compliment to the pudding. People come back for seconds and I always leave with an empty pan. Really miss having the leftovers!

I chose this recipe because I had some blueberries to use up. I really like bread pudding but this was the first one I ever made so I was a bit worried. I just used wheat bread that I had, I didn't have any Amaretto so I used some almond extract instead, and I used all fresh berries. It was fabulous! My boyfriend and my roommate both thought that they didn't like bread pudding, but this changed their minds! Wonderful flavor, and I agree that the sauce adds something extra! Also, I always thought that most of Emeril's recipes were too complex, but now I'm willing to try others. Bring it on!

I substitute wild high mountain huckleberries for the blueberries and it is just as good as with the blueberry if not as sweet. Each time I serve it every one begs for more and wants the recipe, Just not enought good things to say about this bread pudding..

I've been making this for the past 3 years for our Thanksgiving and Christmas dinners. And every year, I'm told I don't make enough. This year I'll be making 3 so that everyone can get seconds. I do pass on the amaretto cream sauce, the bread pudding is still fantastic without it.

My husband & I first tried bread pudding (white chocolate bread pudding w/Frangelico cream sauce at a Cajun restaurant and we loved it, when they closed down I had to look for a recipe and this was the closest to the one they had. Made it without the berries and added pecans, I also melted the white chocolate then added the cream to it before adding the rest of the ingredients. It was fantastic! You taste the white chocolate in every bite, my family couldn't get enough of it. Next I'm trying the chocolate bread pudding.

I don't even like bread pudding but this was incredible... So delicious with easy to follow directions. I used Challah bread (you can find it at Safeway I didn't used the dried blueberries either, and i cut the recipe in half b/c I was only making it for my bf and me. Seriously, this is a great great recipe. I normally associate Emeril with pork and entree dishes, but he has great dessert recipes. My bf loves strawberry rhubarb pie and I used Emeril's recipe and it turned out fantastic. Better than his mother's he says, but he'd never admit it to her =P

I have made this bread pudding probably about 20 times now and it's always a hit. Everyone loves it, no matter if they love bread pudding or not. I have tried lots of different breads for it, and my favorite is Challah, which I buy pre-sliced. I also omit the dried blueberries for all fresh and it's never let me down. The sauce is also very good, and my friends always request extra sauce. One woman even told me not to return to her holiday parties unless I was planning to bring the now Famous Bread Pudding!
