I know whoopie pies (or 'Gobs' the cake on this one is very very close, it could stand to be a touch sweeter. The filling however isn't quite right. First, you will NOT get a good creamy consistency by beating the egg whites stiff and then trying to get shortening to combine with them. The filling stayed grainy. The taste of the filling wasn't quite right either. It's not bad though. A dead giveaway for a NON authentic whoopie pie recipe is if it has marshmallow fluff in it. REAL whoopie pies do NOT have marshmallow fluff in them (so in this part Emeril got it right. I use a cooked flour/milk icing recipe with an egg white added for the filling that is good. An addition to the cookie recipe that I used: 1/2 ts. instant coffee granules and I used Droste dutched (alkali processed cocoa.

I agree with AMY
I can't seem to figure out how the egg whites whipped first, come together with the shortening in a uniform mixture. It just came out grainy, it tasted fine, but I wasn't happy with the texture of the icing.

every time i make whoopie pies they either come out really cakie and thick or my frosting ends up lumpy from the shortening. They came out perfect this time! They were very moist and rich, not too sweet though.

This recipe is extremely easy and the closest to traditional whoopie pies as close can be. The cream filling is nice and fluffy while the chocolate cakes come out nice and moist. One tip do not compltelt wrap with plastic wrap for they get too moist instead just lay plastic wrap over the top they wont go stale.

The pie was bland and the filling was too sweet. The flavors did not mix well.

They are easy to make and they taste great I have made them a couple of times and my husband Love's them. Best if chilled first before eating them.
