I never realized that something SOOOOOO good would be something SOOOOO easy to make. Of course, these were an instant hit with the kids!

I made these for my child's pre-school Halloween party. I used royal icing to pipe on eyes and lips so they looked like little monsters. The kids LOVED them...and so did many of the other parents.
The only complaint I had was that the frosting filling was not too fluffy. It could be my fault...maybe I didn't whip the egg whites enough. But, I wonder if there is a buttercream recipe that will give a lighter more fluffy filling. The one in this recipe was a bit thick and heavy for me.

My husband, who grew up on real penn. dutch whoopie pies, loved them. I think the recipe was very, very close to the real thing. It was sweet but not overpowering and it was wonderful how the chocolate and fillig converged in your mouth. Very cool recipe to do alone or have lots of fun with the family.
