I made this sauce with fresh NC blueberries and sage today. I changed the recipe a bit, using only one tablespoon olive oil, used a bit more shallot and no garlic, substituting a can of beef consomme for the veal reduction and all the salt. I used 1 tsp black pepper.
What an amazing fresh sauce!! I used a high quality balsamic vinegar and took the time to reduce the balsamic vinegar per the recipe, and then added the can of consomme and no additional salt was required.

I made this yesterday and it came out pretty awesome. The blueberry reduction sauce gave the pork chops a curious and fantastic flavor. The commenter before me may not have allowed the vinegar to reduce enough before adding the veal reduction. By itself the sauce is ok, but it's when it's paired with the pork that the flavor explodes.

One-half cup of balsamic vinegar? Can this be correct? I found the vinegar overpowering when I tasted it. The whole house smelled like vinegar, and I threw the sauce out!

all great ingredients, good combo's but looks like a dogs breakfast.
