    This did take some to make with several different aspects of the dish, however, it was worth it. Very tasty. Made a much smaller amount than what the recipe called for so I didn't follow measurements but used generally all of the ingredients. Switched out fresh parsley for the basil...different in flavor... But it was good. You will not be disappointed with this dish and you could probably get away with using jarred roasted peppers saving a time consuming step.

    A picture would have been helpful to clarify the layout design and pan size. I used a 1/2 sheet pan and made parallel lines with each element, but next time will try something more interesting.

    My garden is overflowing with zucchini and yellow squash and I was looking for a new way to use the veggies. This is not only a beautiful dish but totally delicious. It was even good leftover the next day. It is worth the effort!

    I tried this recipe because I have friends with gardens that always give a large amounts of zucchini and yellow summer squash away. Much to my surprise, it was excellent. I tweaked it a little. I added a little chopped fresh rosemary along with fresh chopped thyme. I also did not want to go through the bother of roasting a red pepper so I used sun-dried tomatoes. Will definitely use the recipe again.

    This dish is WONDERFUL!!! Having a garden, I'm always looking for different ways to prepare zucchini, squash, and bell peppers. Everyone at our dinner party enjoyed this dish. We were thinking about different ways to serve this (atop homemade pizzas, over pasta. YUMMMMM...! Would agree, watch the amount of olive oil mixture. I roasted my own bell peppers, delicious!

    This dish is very easy to make, and is excellent.. I also tried chopping a little sun dried tomatoes, and sprinkling on top... My husband raved about it...

    My garden is flooded with squash and zucchini so I tried this dish to use up a lot of it. Everyone loved it and I ended up making it 3x in one week. Gotta give this a try!

    This was really very easy to prepare. I made it without the red peppers since I have an intolerance for peppers. But, it went over very well and I got praises for the dish. Good alternative for zucchini and squash which are not big winners in my house, but, this recipe was enjoyed by all.

    I have served this dish so many times I dont need to review the recipe anymore. Anytime I serve this, everyone raves about it. I absolutely love it!!!!

    a very impresive side dish with great flavor. A little bit of work but worth every minute. Goes wonderful with filet mignon or any grilled steak
