Excellent recipe! My teenager son's favorite, I have fixed this dish many times and modified the recipe some..., by adding one crushed garlic, 1 tbsp of tomato paste and use 1/2 cup white whine and chicken stock instead of water. I also add chopped cilantro to serve....

Not only have my husband and I cooked many of Emeril's recipes, but I have also tried several jambalaya recipes as well. This particular recipe was not what I expected. It wasn't bad, but it wasn't great either. I followed his recipe adding a little more salt and some fresh garlic, but I still found the recipe rather bland. My three kids, all picky eaters and under the age of five ate it, so it couldn't have been too bad, but if you are a foodie and like a lot of flavors, I would not recommend this. Would probably try a different recipe the next time I make jambalaya.

This is our favorite jambalaya ever ... We kick up the sausage (sometimes smoked , Turkey , andouilli, polish We put extra meats chicken and sausage and burn the bottom. Everyone loves the carmelization. I have cooked this from Louisana and Rustic cookbook

This was very easy and fast, but it was just ok. My family said it was fine, but bland; even with the spices. This is the first Emeril recipe I have tried that did not knock my socks off. It could be that we don't like jambalaya; this is the first time we have had it. I enjoy Emeril's recipes and will try something else.
